Menu & Ordering

Start with Thiébou Dieun (Rice & Fish), Sénégal's national dish, or Mafé, a rich peanut stew. Add a Fataya or Nems to share and a Bissap (hibiscus) to drink. Yassa and Dibi are great if you prefer grilled or tangy flavors.

Thiébou Dieun, also written thieboudienne or ceebu jën, is Sénégal's national dish: broken rice slow-simmered in a tomato base with fish and vegetables such as carrot, cabbage, cassava, eggplant and okra. UNESCO inscribed ceebu jën on its Intangible Cultural Heritage list in 2021. JSK serves it for $19.

Mafé is a West African peanut stew. At JSK, beef is slow-simmered in a rich peanut sauce with tomato, onion, carrot, potato and cabbage and served over rice. It contains peanuts.

Yassa is a Sénégalese dish of meat or fish marinated in lemon, mustard and lots of onions, then cooked until the onions caramelize into a tangy sauce. JSK serves Fish Yassa over rice.

Dibi is Sénégalese street-food-style grilled meat, seasoned with mustard, pepper and spices and served with onions and a side. JSK's Dibi is charcoal-grilled lamb or mutton with a choice of vermicelli, fried plantains or fries; Dibi Pintade uses guinea fowl.

Fataya are fried dough pockets filled with seasoned meat or fish, onion and parsley, served with spicy tomato sauce. Nems are crispy fried spring rolls filled with vegetables and beef or chicken. Each is $11 at JSK.

Bissap is a tart hibiscus drink and Bouyé is a creamy baobab fruit drink; Ginger Juice is fresh ginger and lemon. Thiakry and Ngalakh are millet couscous desserts — Thiakry with sweetened yogurt and nutmeg, Ngalakh with baobab fruit and peanut butter. Each is $6 at JSK.

Most JSK entrées cost $19–$22, the Mixed Shawarma wrap is $12, Fataya and Nems are $11, and drinks and desserts are $3–$6. JSK's price range is $$.

Senegalese Food & Culture

Senegalese food is a West African cuisine built on rice, fish, slow-cooked stews, onions, mustard, lemon and hot pepper. Signature dishes include ceebu jën (Thiébou Dieun), yassa, mafé and dibi. It is known for generous, shared meals and the hospitality concept called teranga.

Jollof rice is a tomato-based West African rice dish. Its name is linked to the Wolof people, and many food historians trace it to the Wolof (Jolof) Empire in what is now Sénégal, where the fish-and-rice dish ceebu jën is its ancestor. Origins are debated across West Africa.

They are close relatives. Jollof rice is widely regarded as a descendant of Senegalese ceebu jën (Thiébou Dieun), which cooks broken rice with fish and vegetables in a tomato base. JSK's name reflects that heritage.

According to UNESCO, ceebu jën originated in the fishing communities of Saint-Louis, an island city in northern Sénégal. UNESCO inscribed it on the Representative List of the Intangible Cultural Heritage of Humanity in 2021. Saint-Louis is also St. Louis, Missouri's sister city.

Teranga is a Wolof word for hospitality — the Sénégalese belief that a guest is a gift. It is central to Sénégalese culture and how JSK runs its kitchen: come as a guest, leave like family.

St. Louis, Missouri and Saint-Louis, Sénégal have been sister cities since 1994, a partnership that began when citizens of Saint-Louis, Sénégal reached out to St. Louis, and that marked its 30th anniversary in 2024. It involves school, cultural and civic exchanges. JSK is a restaurant that puts that connection on a plate.
